Project Homemade: Salad Dressing

I've found my new favorite salad dressing....and I can make it myself in just a few minutes any time I want some.

This salad dressing comes from the "Simply Salad" cookbook by Jennifer Chandler. It actually doesn't have a name but it tastes a lot like French or Russian salad dressing but it is a much lighter consistency.

Favorite Homemade Salad Dressing

1/4 c. vegetable oil (I use olive oil)
1/4 c. red wine vinegar
2 T. sugar (or Splenda)
1 T. ketchup
salt and pepper

In a small bowl whisk together the oil, vinegar, sugar, and ketchup until the sugar has dissolved. Season with salt and pepper to taste. Makes about 1/2 cup of dressing.
